I am looking for a good clean easy diet. All these diets keto, Atkins, and poleo confuse me. Im not big on eating a lot of fish. Need help desperately

I don't think you need a "diet" as such. Keep it simple, try to eat foods in as natural a form as possible, for example fresh veggies, lean meat and fresh fruit. Reduce the amount of sauces, dressings and added sugars you use. Cut down on snacking unless its plain fruit or veggies. Most snack foods are high in fat or added sugar.

As an example a typical day's menu for me would be:
Breakfast: Overnight oats (cold soak) with milk and blueberries.
Lunch: Kale salad (I love those kale salad kits) with grilled chicken or maybe I'd have a home made veggie soup. Apple for after.
Dinner: Grilled Pork chop with baby red potatoes, steamed broccoli, carrots and green beans. Dessert might be a few grapes or a handful of strawberries, nothing added.
Full disclosure I have eaten this way for years because I have Celiac disease (so cannot eat gluten ie. wheat barley or rye) and also had my gallbladder out 4 years ago, so I cannot tolerate high fat foods very well.
I'm neither rich nor fancy, I buy my veggies and fruit at the 99c store. I have a full time job and also care for my 95 yo mother-in-law. I do food prep on the weekends, making soups and freezing into portions, ditto casseroles. Anything that helps making a meal at the end of the day a little bit easier.

Remove sugar, alcohol, gluten, soy, and dairy for 3 months. See if that helps with psoriasis. I am on week 4 without these and I am less itchy but patches remain. Look on Pinterest for Psoriasis recipes.. Look for Paleo recipes. Plan your week and prep food so you don't grab the junk food.

Its more about meal planning. I guess. I have so many thing wrong that Im not sure what to eat. Psa, diabetes, fatty liver, epilepsy, and heart. Its not about carbs/ calories. It's about eating right.
