They will sell beef tallow in stores generally. I found pure tallow at Walmart actually recently. It has a shelf life between 6 months and a year. It has to stay sealed like the lid has to be tight. That's what I read.
Also once opened especially store it in cool place like in a cabinet away from heat or stove.
